Happy Hour!

During this summer we have been celebrating Happy Hour! following the awesome advise of Lynn Pardey on her book `Care and feeding of Sailing Crew’ .

Each evening when we come after work, we just relax with a glass of wine and an appetizer to enjoy the gorgeous view of Nanaimo harbor from our boat.

Last week I prepared Nachos following my motto of simple and easy. Be prepared to be asked for more because they are absolutely delicious.  Enjoy!

Ingredients
  • 2 Tortillas
  • 1 cup of salsa
  • 1 cup of shredded cheddar cheese
Instructions
  1. Cut the tortillas in 6 pieces and put them in lightly oiled pan
  2. Bake them in a 325 degree oven for 5 minutes each side until they are crispy
  3. Take them out of the oven and put one scoop of salsa and cheese on each one
  4. Broil or bake until cheese melts (approx. 5 to 10 minutes)

Oh… Nutella!

Have you ever tried Nutella? If not… you should. Nutella is a hazelnut chocolate cream, absolutely delicious to just eat it from the jar!

My friend Sharon is a big fun of Nutella and icecream. So, I thought what a better way than to combine them together.  We went to visit her and Paul to their “land” home. I knew I will have to make Nutella Ice-cream for her.

I researched all over the blogs and found this extreamely easy and yummy recipe.  Enjoy!

Nutella Ice Cream

Ingredients
  • 750 gr Nutella
  • 2 cans Evaporated Milk
Instructions
  1. Combine the Nutella and the evaporated milk in a medium freezer-safe mixing bowl, and stir with a whisk until they become one, voluptuous and smooth. Place in the freezer.
  2. Every hour or so, remove the container from the freezer, draw the sides in with a fork (the ice cream will set on the sides first), stir vigorously, and return to the freezer.
  3. Your ice cream will be ready by dinnertime.
